Preparation Instructions for Homemade Dosa Batter
1. Prepare the Batter:
Before using, allow the batter to come to room temperature for better spreadability and consistency.
Stir the batter well. Depending on your preference for the thickness of the dosas, you may need to adjust the consistency of the batter. If it's too thick, gradually add water and mix until you reach a flowing consistency that easily pours off a spoon but isn't too watery.
2. Heat the Tawa:
Place a non-stick tawa (or flat griddle) on medium heat. Allow it to heat up properly until it’s moderately hot. You can test the heat by sprinkling a few drops of water on it. The water should sizzle and evaporate quickly if the tawa is ready.
3. Pour the Batter:
Pour a ladleful of the dosa batter in the center of the hot tawa. Using the bottom of the ladle or a small bowl, gently spread the batter in a circular motion from the center towards the edges to form a thin round dosa.
4. Cook the Dosa:
Drizzle a teaspoon of oil or ghee around the edges of the dosa to enhance crispiness.
Cook until the edges begin to lift from the tawa and the bottom of the dosa turns golden brown, about 1-2 minutes.
Use a flat spatula to carefully flip the dosa over. Cook for another 30-60 seconds on the other side, or until it reaches your desired level of crispiness.
5. Serve Hot: Serve the dosa hot off the tawa with your choice of chutney, sambar, or other accompaniments.
Note: Each tawa or griddle may behave differently; adjust the heat as necessary to ensure the dosas cook evenly without burning.
